It would be nice if bookerville discarded outstanding booking requests once an actual booking was confirmed that overlapped with an outstanding booking request.

We've tried that before, but a lot of people wanted to keep the information around to try to sell the customer other time-slots, or in case the actual (overlapping) booking falls through.
What about a button on the Outstanding Booking Requests page that will delete all Booking Requests that are overlapped?

YES, That button would be great. I just individually deleted 8 inquiries for Christmas week after booking the longest requested period!
