Do regular HTML codes work in templates, specifically <font size="?"> </font>, would it need to be [FONT SIZE=] following your format?

No they don't. There is a (very) limited subset of HTML "pseudo" code that you can use.
In this case, there is a FONT tag you can use to achieve almost whatever you like:
[FONT STYLE="color: #56F389; font-size: 25px; font-family: Arial;"]Whatever text you want in this font[/FONT]

Yes, the double-quotes around the STYLE attribute are required. That part works exactly like HTML/CSS.
The color values are indeed web hexadecimal colors, same as you would use in a website.
There really aren't many more tags than that. If you have needs that are beyond simple text formatting, centering, bolding, italics (and all of those I believe are in the tag legend), please let me know and we can explore the possibility of adding support for it.
